2. The boys have been having lots of fun recently. Their dad has been taking them ice skating and swimming. They've been going to the park. The older two are both signed up for soccer starting in April. I think this is going to be a busy summer, but also lots of fun! They look like they're up to something in this picture.
3. I have been having salads for lunch everyday at work for the past 3 weeks and I love it. I love veggies! I love making the salad each night and looking at all the different colors. I feel good eating it everyday. This week I've been enjoying the salads with some Dijon Vinaigrette dressing that I made.
4. I went to the library at the beginning of the week and picked up some new books. I've been having fun looking through all of them and getting some new ideas. The juicing book is great because it lists different mixtures for different ailments. The other books are about Raw Food and Vegan recipes.

ReplyDeleteTry to go lighter and lighter on the dressing. Maybe squeeze an orange or lemon over the veggies. That can really bring out the taste!

Good luck with your run, Heather. I use Jamie Oliver's salad dressing recipes again and again - I especially like the one with shallots, basil, Italian parsley, marjoram (all fresh), olive oil and red wine vinegar - emulsified in the food processor. For an even easier one from Jamie: juice of one lemon, 5 T. extra-virgin olive oil, salt and pepper.

ReplyDeletei usually just use oil/vinegar on my salads. if there is chicken, fish or cheese on it i can usu get by with no dressing. (i am allergic to most dressing as they have soybean oil in them).
