Fun New Things

On Saturday I tried a wonderful new recipe for Vegetarian Korma posted by Aimee last Tuesday.

The kitchen smelled so good after I added all of the spices. I thought the recipe was really easy to make and although it may seem like there are a lot of ingredients, it's mostly just vegetables that need to be cut up. I really didn't feel like it took me that long and in the end it was worth it. I could eat this everyday. The only adjustment I made was using a little bit of Agave (maybe a 1 tsp.) instead of the brown sugar. I served this over brown rice. If you like veggies and yummy spices you should try this! I will definitely be making this again and again.
The other thing that was exciting this weekend was buying a new juicer!! I love this thing. I've been juicing everyday for me and the kids. Here's a shot of the new juicer and my lovely Green Juice that I made this morning. I feel so great after drinking this each morning because I know I'm taking care of myself and I've made a good choice at the start of my day and that leads to making more good choices throughout the day.

I am still in favor of chewing my veggies and fruit. I put veggie in my eggs in the morning since I don't like to drink calories. I must admit that on a hot summer day veggie/fruit smoothie looks pretty tempting!

I just had Chicken Korma for dinner on Saturday! I can't wait to make this, although I will probably add some chunks of chicken breast to keep everybody in the family satisfied. Thanks, Heather!

And weirdly enough, I also bought a can of coconut milk not knowing what I was going to do with it. Pretty coincidental right? :)
